Chocolate Cups Filling Recipe

Pastry Cream and Berry Filling

This recipe for Chocolate Cups Filling makes delicious pastry cream filling with berries. 

I made these filled chocolate cups using fresh red raspberries, however, if desired, you can easily substitute fresh sliced strawberries, or blueberries or other berries in the place of the red raspberries.

Make this filling for chocolate cups that you have made yourself, or you can use ready-made chocolate cups (scroll down for links to buy these cups).

I made these for Mother's Day last week, and they were a feast for the eyes, and a feast for the palate!

I took pictures of the finished, filled chocolate cups to share on this my website, but unfortunately, I mistakenly deleted the images ... so I do not have pictures of this dessert to share:(

Ingredients

This recipe makes enough chocolate cups filling for about 1 dozen (small-medium size) chocolate cups.

2 oz. cream cheese, softened
1/2 cup sour cream
1/3 cup granulated sugar
2 tbsp. cornstarch
1 1/2 cups milk
2 egg yolks, beaten
1 1/2 tsp. vanilla extract
1 1/2 cups fresh red or black raspberries

Directions

Add the sour cream, and beat until smooth. Set aside.

In a small pan, combine the sugar and the cornstarch.

Using a whisk, gently stir in the milk until smooth.

Cook and stir over medium-high heat, until thickened and bubbly, then reduce heat to low, and cook for 2 minutes more, stirring constantly to avoid sticking and burning.

Remove from heat, and stir a small amount of the hot mixture into the beaten egg yolks, return all to the pan, stirring constantly.

Bring mixture to a gentle boil, cook and stir for 2 minutes. Be sure to keep stirring to prevent sticking and burning.

Remove mixture from heat, stir in the vanilla extract and the reserved sour cream mixture.

Cool the filling to room temperature, stirring occasionally, then referigerate until chilled.

To Assemble:

Gently remove the chocolate cups from their packaging and arrange them on a tray.

Fill the cups with the pastry cream and top with a few fresh raspberries.

Chill and store the filled chocolate cups in the refrigerator until serving.

Chocolate cups,  can also be used to serve ice cream or mousse ... a unique way to serve dessert! Everyone loves something different!
