They made this treat for my husband's birthday party! It is TRULY amazing!

Chocolate Raspberry Cheesecake Recipe with Irish Cream Liqueur

For the Cheesecake

Ingredients

2 cups chocolate graham cracker crumbs
1/3 cup firmly packed brown sugar
1/2 cup finely chopped pecans
1 tsp. ground cinnamon
1/2 cup butter, melted
2 1/4 lbs. cream cheese, softened (4 pkges.)
1 1/2 cups sugar
5 large eggs
1 tsp. vanilla extract
1 cup Irish Cream liqueur
Chocolate Glaze (recipe follows)
fresh raspberries to garnish

Directions

In a medium bowl, combine cracker crumbs, brown sugar, pecans and cinnamon.

Stir in the melted butter.

Press the cracker crumb mixture above into the bottom and 1 inch up the sides of a 10 inch springform pan.

Bake at 325° F for 10 minutes.

In a large bowl, beat cream cheese with an electric mixer at medium speed until creamy, gradually add sugar, beating well after each addition.

Beat in vanilla.

Pour half of the batter into prepared pan.

Stir the Irish Cream liqueur into the remaining batter.

Pour the Irish Cream batter over the plain batter.

Bake at 325° F for 1 hour.

Remove cheesecake from oven, let cool 10 minutes.

Spoon the Chocolate Glaze (recipe below) over the cheesecake.

Let cool completely. Cover and chill for 8 hours.

Gently run a knife around the edge of the pan to release the sides.

Remove the cake from the pan and garnish with raspberries and additional chocolate (if desired).

To make chocolate drizzle, melt chocolate chips in the microwave, or over medium heat (approx. 1/3 cup). Pour the melted chocolate into a plastic icing bag (or a small clear bag), cut a very small hole in the end (corner if using a regular bag) and drizzle chocolate over cheesecake. You can also drizzle chocolate on the individual cake plates as well!

For the Chocolate Glaze

Ingredients

1/4 cup butter
2 (1-ounce) squares semisweet chocolate
3/4 cup sugar
1/2 cup heavy whipping cream (35% is good)
1/4 cup unsweetened cocoa powder
1/2 tsp. vanilla extract
1/8 tsp. salt

Directions

In a medium saucepan, melt butter and chocolate over medium-low heat. Whisk in sugar, cream, cocoa, vanilla and salt, whisking until combined.

Cook over medium-low heat 2 minutes, whisking constantly.
