Easy Raspberry Scone Recipe

Scones with Fruit for Breakfast, Brunch or Tea Time!

My daughter made this Easy Raspberry Scone Recipe to serve when the whole family was coming for a visit.

A great basic scone recipe that can easily be adapted to compliment almost any meal or snack time menu.

You can use ANY type of fresh raspberries for these scones: red, black, purple or yellow / gold raspberries!

The scones she made were plain, without raspberries, because we were having a vegetable soup dinner ... you can substitute grated cheese, raisins, currants or other fruit in the place of the raspberries.

These scones are very moist, and scrumptious, especially when served warm!

You can even get your kids to help with cutting them out with the cookie cutter ... kids love to help with that!







Ingredients

2 cups all-purpose flour
1/4 cup sugar
1 tsp. cream of tartar
1/2 tsp. salt
1 tsp. baking soda
1/2 cup butter or margarine
2/3 to 3/4 cup milk
3/4 cup fresh raspberries


Directions

In a bowl, combine the dry ingredients and cut in the butter or margarine until the mixture resembles coarse crumbs.

Gradually add the milk to make a soft dough, then add the raspberries.

Knead the dough four times.

On a lightly floured surface, roll out the dough to a 1/2 inch thickness and cut out the scones with a 2 inch round cookie cutter.

Place on an un-greased cookie sheet and bake 10 - 12 minutes, or until golden brown.

Makes approx. 10 scones.
