Easy Raspberry Scone Recipe
This Easy Raspberry Scone Recipe is very easy to make! My daughter made these a while back when the whole family was visiting. The scones she made were plain, without raspberries, because we were having a vegetable soup dinner...you can substitute grated cheese, raisins, currants or other fruit in the place of the raspberries. These scones are very moist, and scrumptious, especially when served warm! You can even get your kids to help with cutting them out with the cookie cutter...kids love to help with that!
Ingredients2 cups all-purpose flour 1/4 cup sugar 1 tsp. cream of tartar 1/2 tsp. salt 1 tsp. baking soda 1/2 cup butter or margarine 2/3 to 3/4 cup milk 3/4 cup fresh raspberries Directions In a bowl, combine the dry ingredients and cut in the butter or margarine until the mixture resembles coarse crumbs. Gradually add the milk to make a soft dough. Knead the dough four times. On a lightly floured surface, roll out the dough to a 1/2 inch thickness and cut out the scones with a 2 inch round cookie cutter. Place on an un-greased cookie sheet and bake 10 - 12 minutes, or until golden brown. Makes approx. 10 scones.
