Use frozen raspberries, lemonade and vanilla ice cream to make an amazing raspberry ice cream!

How to Make Your Own Ice Cream
Without an Ice Cream Maker

  • First of all, to freeze your ice cream mixture successfully, your freezer temperature must be set to 0° (-18C), or, if you have the option on your freezer, use the "fast-freeze" option.
  • When your ice cream mixture is made, place it into a freezer safe container, cover it, and put it into the coldest part of your freezer.
  • Leave the ice cream mixture for about 1 - 1 1/2 hours, or until the sides and the bottom are just frozen and the middle of the mixture is still soft slush.
  • Remove the mixture from the freezer and beat it, using an electric whisk, mixer, or a food processor. Beat it until the ice crystals are uniform. It is important to work quickly at this stage to prevent the ice crystals from melting.
  • Cover the mixture, and quickly return it to the freezer.
  • Repeat this process two more times, at 1 - 1 1/2 hour intervals. If you are adding large chunks, such as chocolate, broken cookies or candy, add them after the third or fourth beating.
  • After the final beating, allow the ice cream to freeze for at least 2 hours, or preferably overnight, before serving.

Note - it is not necessary to beat a "semifreddo" while still freezing it - just cover the surface area and freeze it for at least 6 hours or more.

Best Ice Cream Makers

Although you do not need an ice cream maker to make great homemade ice cream, as with so many things, appliances do, obviously, make the job much easier.

There are many different styles of Ice Cream Machines on the market, differing in function, form and cost.

If you are considering an Ice Cream Maker, be sure to investigate the options available, and, if possible read customer reviews for the choices which interest you the most.

If you own a Kitchenaid Stand Mixer, you can purchase an attachment to use for making ice cream (see item at far right, below).

Here, below, are several different models which are available for purchase at *Amazon.com.

I own the Cuisinart Ice Cream Maker (the first item at the left, below), and I am very happy with it's performance ... I whole-heartedly recommend this model!
