If you have an assortment of fresh berries on hand such as raspberries, strawberries and blueberries, you can use all the different types of berries ... or use only one or two types of berries!

Ingredients

2 1/2 cups all-purpose flour, divided
1 cup granulated sugar, divided
2 tsp. baking soda
1/4 tsp. ground cinnamon
1/8 tsp. allspice
1/8 tsp. clove spice
1/8 tsp. ground nutmeg
1/8 tsp. ginger
1 cup plus 1 tbsp. (1%) low fat milk
3 egg whites
1 tsp. vanilla extract
1/4 cup butter, melted, divided
1 1/2 assorted
fresh berries
(raspberries, blueberries, strawberries)



Directions

In a cup, combine the cinnamon, allspice, clove spice, nutmeg and ginger to make the spice mixture.

In a large size bowl, whisk together to combine: 2 cups of flour, 3/4 cup of sugar, baking powder and 1/4 of the spice mixture, above.







In a medium size bowl, stir to combine 1 cup milk, egg whites, 3 tbsp. of butter and the vanilla.

Stir the egg mixture into the flour mixture, just until well combined.

Pour batter into a greased (I use non-stick cooking spray), 8" round baking pan.

Bake at 350° F for 12 - 15 minutes, or until the edges just start to set.

In a small size bowl, combine the remaining 1/2 cup flour, 1/4 cup sugar, and the remaining spice mixture.

Stir in the remaining 1 tbsp. melted butter, and the 1 tbsp. remaining milk, and stir until mixture resembles coarse crumbs, then gently stir in the berries (being careful not to break up the fruit too much!).

Sprinkle the fruit and crumb mixture over the cake.

Bake 35 - 40 minutes or until a toothpick inserted in the center comes out clean.

Cool cake on a wire rack.

Serves 12.

Each piece contains about 218 calories.
