Mothers Day Dessert Recipe Idea
Creamy Lemon Dessert Squares
For Mother's Day



This (see the pictures!) Mothers Day Dessert Recipe makes delicious creamy, lemon squares for dessert or snack time. Our Daughter and Son-In-Law brought this for me when they came for a visit this past weekend...actually, my daughter said her husband made it for me! Sweet eh? It tasted fabulous and FRESH! (I am not surprised he made it because he is an amazing chef! Thanks Joel!)

Ingredients

1 1/2 cups Graham Crumbs
1/2 cups, plus 2 tbsp. granulated sugar
6 tbsp. butter
2 pkgs. (250 grams, each), cream cheese, softened
3 cups plus 2 tbsp. cold milk
2 pkgs. (4-serving size, each), lemon instant pudding
3 cups thawed Dessert Whipped Topping (Example: "Cool Whip")
fresh raspberries for garnish, (or other fruit of your choice)

Directions

In a bowl, mix the graham crumbs, 1/4 cup sugar and butter until well blended.

Press into a 9" x 13" glass baking dish.



Bake at 350° F for 8 minutes.

Allow crust to cool for about 15 - 20 minutes.

In a bowl, beat, with a whisk, the cream cheese, the remaining sugar (1/4 cup, plus 2 tbsp.), and 1/4 cup, plus 2 tbsp. of the milk, until well blended.

Spread over the crust base.

In a bowl, beat the pudding mixes and the remaining milk (2 3/4 cups) with a whisk for 3 minutes.

Pour over the cream cheese base layer in the baking dish.

Let stand for about 5 minutes, or until thickened.

Cover with the Dessert Topping, ("Cool Whip"), and refrigerate at least 4 hours before serving.

Garnish with fresh raspberries (or other fruit of your choice), just prior to serving.

SIMPLY SCRUMPTIOUS!

Hint - For easier serving, freeze the already chilled dessert for 1 hour, (no longer!), before cutting into squares.
