Mothers Day Dessert Recipe Idea -

Creamy Lemon Dessert Squares

This (see the pictures!) Mothers Day Dessert Recipe makes delicious creamy, lemon squares.

Our Daughter and Son-In-Law brought this for me when they came for a visit this past weekend ... Mother's Day ... actually, my daughter said her husband made it for me!

Sweet eh?

Ingredients

1 1/2 cups Graham Crumbs
1/2 cups, plus 2 tbsp. granulated sugar
6 tbsp. butter
2 pkgs. (250 grams, each), cream cheese, softened
3 cups plus 2 tbsp. cold milk
2 pkgs. (4-serving size, each), lemon instant pudding
3 cups thawed Dessert Whipped Topping (Example: "Cool Whip")
fresh raspberries for garnish, (or other fruit of your choice)

Directions

In a bowl, mix the graham crumbs, 1/4 cup sugar and butter until well blended.

Press into a 9" x 13" glass baking dish.

Bake at 350° F for 8 minutes.

Allow crust to cool for about 15 - 20 minutes.

In a bowl, beat, with a whisk, the cream cheese, the remaining sugar (1/4 cup, plus 2 tbsp.), and 1/4 cup, plus 2 tbsp. of the milk, until well blended.

Spread over the crust base.

In a bowl, beat the pudding mixes and the remaining milk (2 3/4 cups) with a whisk for 3 minutes.

Pour over the cream cheese base layer in the baking dish.

Let stand for about 5 minutes, or until thickened.

Cover with the Dessert Topping, ("Cool Whip"), and refrigerate at least 4 hours before serving.

Garnish with fresh raspberries (or other fruit of your choice), just prior to serving.

SIMPLY SCRUMPTIOUS!

TIP -- For easier serving, freeze the already chilled dessert for 1 hour, (no longer!), before cutting into squares.
