This Raspberry Puffed Pancake makes A Great Pancake Day Breakfast, or Brunch!
This is a "Puffed" Pancake Day Recipe made from "scratch". Something different to try for Pancake Day. It is baked in the oven and serves four people. You can top these pancake wedge servings with fresh raspberries and icing sugar, or a raspberry sauce of your choice.
Ingredients3 eggs 1/2 cup all-purpose flour 1/2 cup milk 2 tbsps. butter, melted 1 tbsp. granulated sugar 1/8 tsp. salt 1/8 tsp. cinnamon *1 quart raspberries *icing sugar *or your choice of a raspberry sauce For a Choice of the Best Raspberry Sauce Recipes go here. Directions Combine the eggs, flour, milk, melted butter, sugar, salt and cinnamon in a blender. Cover, and blend until smooth, about 30 seconds. Pour batter into a well greased 9" round layer cake pan. Bake at 450° F for 20 - 25 minutes or until puffed and golden brown. Remove pancake from pan and place on a serving plate. Immediately top with raspberries and then icing sugar, or drizzle the raspberry sauce over the pancake. Cut into wedges, and serve. Makes 4 servings. Did You Know?
