Raspberry Bars / Squares
Recipe with Raspberry Pie Filling

These Raspberry Bars (see photo!) make amazing, raspberry pie squares, for holiday baking squares, or anytime! This is a great recipe using raspberry pie filling. My sweet niece, Alana, made these delicious squares for our family Christmas Party, and they were scrumptious! Alana, (mother of 5), is a very experienced baker, who, when asked to bring 1 dozen squares to a party, always brings about 5 dozen homemade treats!Thanks Alana!

Raspberry Pie BarsSquares Recipe




*Note - If desired, you can use raspberry jam instead of the raspberry pie filling, but ensure it is of a thick enough consistency. If you are using frozen raspberry jam, you may need to thicken it a bit.

Ingredients

1 cup margarine
1 1/2 cups granulated sugar
4 eggs.
1 tsp. almond extract
2 cups all-purpose flour
2 tsp. baking powder
1 can raspberry pie filling

Directions

In a large bowl, beat the margarine, and the sugar until well combined.

Add the eggs, one at a time, and the almond extract, and continue to beat.

Fold in the flour and the baking powder.

Transfer the mixture into a 9" x 13" baking dish.

Spread the raspberry pie filling over the batter in the baking dish.

Bake at 350° F for about 45 minutes.

This easy raspberry recipe makes very festive looking squares for holiday-time baking! The bright red colour of raspberries is a sure "eye catcher" for any Christmas Cookie/Bar Tray or for a Valentine's Day Treat!
