A Raspberry Bundt Cake Recipe that is so easy and quick(!) to make using a store-purchased cake mix, and only 5 other ingredients which you probably already have in your kitchen ... truly an amazing raspberry dessert cake idea!
I made this cake yesterday, and I simply cannot believe how amazing it both LOOKS and how QUICK and EASY it is to make.
You can make this simple raspberry cake in about 5 minutes!
1 box (510 gr. size) yellow or golden cake mix (purchased)
1 pkg. (size that makes 2 cups), NOT prepared! dessert topping mix
1 (85 gr. size) pkg. raspberry flavoured gelatin (example: Jello)
1 1/3 cup fresh raspberries or 10 oz. frozen raspberries
1 cup vegetable oil
powdered (confectioner's) sugar (optional)
fresh raspberries for garnish (optional)
whipped cream for garnish (optional)
(when I wrote "easy", I meant "easy") ...
In a bowl, combine all the ingredients, except the raspberries, and mix well using an electric hand mixer.
Mix for about 2 minutes.
Add the raspberries and mix very briefly, just to combine!
Bake in a greased bundt pan at 350° for 50 - 55 minutes, or until a toothpick inserted in the center comes out clean.
When cake is done, allow to cool for 10 minutes, then invert onto a cake plate, and sprinkle with powdered sugar (optional).
Serve with fresh raspberries and whipped cream, if desired.
