Raspberry Cheesecake Coffee Cake A Cheesecake and a Coffee Cake Recipe in ONE!
This amazing Raspberry Coffee Cake Recipe - Cheesecake is easy to make and includes cream cheese to give it a rich texture and flavour!
Since this recipe calls for raspberry jam, and not fresh raspberries (unless you wish to use them for garnishing), you can make this coffee cake anytime of the year and bring a touch of spring to your table!
IngredientsFOR THE CAKE 2 1/4 cups all purpose flour 3/4 cup sugar 3/4 cup cold butter or margarine 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 cup sour cream 1 egg, beaten 1 1/2 tsps. almond extract FOR THE FILLING 1 pkg. (8 ounces) cream cheese, softened 1/2 cup sugar 1 egg 3/4 cup raspberry jam 1/2 cup slivered almonds
Directions In a large mixing bowl, combine the flour and sugar. Cut in the butter until mixture is "crumbly". Remove 1 cup of the above mixture and set it aside. To the remaining crumbs, add baking powder, baking soda, salt, sour cream, egg and almond extract, and mix well, using a fork. Spread the above mixture into the bottom and 2 inches up the sides of a 9 inch spring form pan. For the filling, combine the cream cheese, sugar and egg in a small bowl and beat until well mixed. Pour the filling mixture over the batter, and spoon the raspberry jam on top. Sprinkle the top with almonds and the reserved crumbs. Bake at 350° F for 60 - 65 minutes, or until a toothpick inserted in the centre comes out clean. Serves 9 - 12.
