Quick Raspberry Dessert Crepes Recipe

If you are looking for a quick Raspberry Dessert recipe to dazzle your guests try these Quick Dessert Crepes. You can make this batter in minutes, cook the crepes and serve immediately, OR, freeze a batch of crepes between layers of waxed paper, and thaw and heat them to serve with your favourite raspberry sauce!



Ingredients

1 cup all-purpose flour
1 tbsp. granulated sugar
1/4 tsp. salt
1 1/2 cups milk
2 eggs
1/3 cup butter, melted
raspberry sauce

Directions

In a bowl, stir together the flour, sugar and salt.

In another bowl, blend together the milk, eggs and 1/4 cup of the butter; whisk into the dry ingredients, blending well.

In an 8" crepe pan, heat a little of the remaining butter over medium heat. Do not allow to burn!

Pour approx. 2 tbsps. of the batter into the pan and swirl quickly to coat the bottom of the pan.

Cook for 30 - 50 seconds or until the bottom is lightly browned.

Flip the crepe or turn gently with a spatula, and cook for approx. 25 seconds longer.

Transfer to a heated plate.

Repeat with the remaining batter, brushing the pan with a little of the melted butter before cooking each crepe.

To serve, fold crepes into thirds, the browned side out and drizzle with the raspberry sauce.
