Best Raspberry Pie Recipe
For a Homemade Berry Pie

This is the Best Basic Raspberry Pie Recipe! It is made with Fresh Raspberries, but can be prepared as directed and frozen and baked at a later date! Serve hot or cold with ice cream or whipped cream. It is my favourite Raspberry Pie!



My daughter worked at a country pie shop, and this is the recipe she used to make amazing raspberry pies!

Raspberry Pie Recipe

Ingredients

Pastry for a 2 crust pie
1 cup sugar
1/3 cup flour
1/8 tsp. salt
4 cups raspberries (adjust to shell size)
1 tbsp. butter
1 tsp. lemon juice
1 egg

Directions

Combine the sugar, flour and salt in a bowl and mix well.

Sprinkle the above mixture into the bottom of the prepared pie crust just to cover the bottom.

Turn raspberries into prepared crust, alternating raspberries and the remaining dry mixture a few times, ending with the dry mixture on top.

Sprinkle the raspberry filling with lemon juice.

Dot the top of the raspberry filling with butter (divided).

Dampen edges of crust and place the second crust on top. Trim and crimp to seal. Cut a few slits in the top.

Whisk the egg, and brush it on the top of the pie crust, right to and including the crimped edges.

Bake at 350° F for about 1 hour. Pie is ready when the raspberry fruit filling bubbles out of the slits in the top.

Serve warm or cold with ice cream or whipped cream.

Note - if baking a frozen pie, bake at 450° F for 15 minutes, and then reduce heat to 350° F for another 40 minutes.
