Cherry Raspberry Preserves Recipe

If you are searching for a recipe for Raspberry Preserves Recipe, here is a great raspberry-cherry preserve recipe. The flavour and the colour of bing cherries and red or black raspberries, complement each other for a great mixture.



*Note - If you are fortunate enough to have both red and black raspberries, you can easily substitute the 8 cups of raspberries with 4 cups of red, and 4 cups of black raspberries.

Ingredients

8 cups fresh raspberries, red or black
4 cups cherries, "bing", pitted
3 1/2 cups granulated sugar
2 tbsps. fresh lemon juice

Directions

In a large bowl, stir together the cherries, raspberries, and the sugar.

Allow the above mixture to stand at room temperature for about 2 hours.

Sterilize 4 - 8 ounce size canning jars, and keep them warm in the oven set to 250° F.

Boil the lids in a small pan to soften the seals, and keep in hot water until ready to use.

Transfer the fruit to a non-reactive saucepan, and stir in the lemon juice.

Cook the mixture over medium heat, stirring occasionally,
for about 30 - 40 minutes, or until the mixture looks
thickened and glazed.Remove a table-spoon of the
preserves to a small saucer and chill in the freezer for 5 minutes. Put your finger through the preserves. If the mixture wrinkles, it is ready to put into jars. If it is not ready, continue to cook for 5 more minutes and repeat the test.

Ladle the hot preserves to within 1/2 inch of the top of the jars.

Seal with hot lids (discs) and metal bands.

Let cool to room temperature, then refrigerate for several weeks.To store longer , process in a boiling water bath.
