Raspberry Rhubarb Dessert Recipe
For a very quick and easy Raspberry Dessert, try this tasty Raspberry Rhubarb Dessert recipe and delight the whole family! You can make this recipe with either frozen raspberries, or frozen strawberries. Raspberries and rhubarb make a winning combination when it comes to combined flavours! If you have harvested a lot of rhubarb, and frozen much of it, here is a great recipe to use your frozen rhubarb to make a scrumptious, fresh, flavourful dessert.
Ingredients4 cups chopped rhubarb (1/2" pieces) frozen or fresh 1/4 cup water 3/4 cup granulated sugar 1 pkg. (85 gram size) raspberry or strawberry gelatin (Example: "Jello") 10 ounces frozen raspberries or strawberries 2 cups vanilla ice cream Directions In a pan, combine the rhubarb, water and sugar. Simmer over low heat, stirring often, till rhubarb is stewed and tender, about 10 minutes. Remove the above mixture from the heat, and stir in the gelatin, and the frozen raspberries or strawberries. Stir in the vanilla ice cream. Pour into a baking dish or serving bowl. Refrigerate until firm. ENJOY!! Did You Know?
