Fresh Raspberry Salad Recipe
With Avocados and Mangos
This mixed greens and fresh Raspberry Salad Recipe with mangos and avocados is a great mixture with ONE amazing taste! The ingredients are listed for serving 4 people, so if you are preparing this yummy salad for less, (or more), guests, simply adjust the ingredient amounts accordingly.
Ingredients3/4 cup fresh raspberries, red or black, divided 1/8 cup olive oil 1/8 cup red-wine vinegar 1/2 small garlic clove, coarsely chopped salt, to taste pepper, to taste 4 cups mixed leafy salad greens 1/2 cup mango, diced 1/2 small avocado, diced 1/4 cup red onion, thinly sliced 1/4 cup almonds, sliced (optional)
Directions Puree 1/4 cup of raspberries, oil, vinegar, garlic, and the salt and pepper in a blender until combined. In a large bowl, combine the mixed leafy salad greens, the mango, avocado and the onion. Pour the dressing mixture on top of the above combination of greens, and gently toss to coat. Divide the salad among 4 salad plates/bowls. Top each salad with the remaining raspberries and sprinkle with the almonds. Serves 4. Enjoy this Fresh Raspberry Salad!
