Raspberry Salad Recipe With Onions and Mushrooms
And Homemade Raspberry Dressing
This Raspberry Salad Recipe with homemade Raspberry Dressing, would serve as a great first course at your next dinner party! For best results, make the dressing at least two days in advance. Once it has cooled, store the dressing in an airtight container in the refrigerator, and use as needed. This recipe can easily be doubled, (or tripled), for a larger number of guests.
IngredientsSALAD DRESSING 3 cups whole, fresh or frozen raspberries 1 cup white vinegar 1 1/2 cups (approx.) granulated sugar SALAD 6 cups mixed torn greens 1 - 2 green onions, sliced 12 mushrooms, sliced 2 tbsps. sliced almonds, toasted Directions SALAD DRESSING Place raspberries and vinegar in a bowl. Stir and then cover. Let above mixture stand at room temp. for 48 hours. Drain, and measure juice. Move the juice to a saucepan, and add an equal amount of sugar to the juice. Stir often as you bring the mixture to a boil. Boil gently for 15 minutes, then remove from heat and cool. Makes about 2 cups of raspberry dressing. SALAD Place the greens, onions, mushrooms and almonds in a bowl. Pour 1/3 cup of the raspberry dressing over top, and toss well. Store the remaining dressing in a sealed container in the refrigerator for future use. Serves 6.
