You can use black or red fresh raspberries for this recipe.

The lemon juice should be fresh, but it is not necessary to use the lemon juice from a freshly squeezed lemon. Bottled lemon juice is fine to use.

Ingredients

Note - If you do not wish to use 1 pound of raspberries for this recipe, you can easily try it first using half of all the ingredients.

1 pound fresh red or black raspberries
3/4 cup granulated sugar
1 egg white, slightly beaten
3 tbsps. fresh lemon juice
1 small pinch salt

Directions

In a blender, or food processor, blend the raspberries until smooth.

(If desired, strain to remove all or part of the seeds)

Add the granulated sugar, the egg white, the lemon juice and the salt, and blend for a few moments until foamy.

Pour into small freezer-safe containers, and freeze.

Serves 8.

YUMMY!

If you don't have an Ice Cream Maker, you may want to consider purchasing one (or adding one to your Christmas Wish List). ;)

I never realized how VERY easy making homemade ice cream is using my Cuisinart Ice Cream Maker (pictured first below).

There is really nothing much to do! It's as easy as using a blender!

Did You Know?

The seeds of raspberries are healthy too?

Ellagic acids, which may slow down the growth of some cancer cells, is found in raspberries (including the seeds!).

In fact, raspberries are a leading source of ellagic acid. Research has shown that ellagic acid from raspberries is easily absorbed by the body.

The seeds of raspberries are also beneficial to the body by providing fibre to keep the intestinal system healthy.
