Make Your Own Raspberry Wine With These Homemade Wine Recipes
Have you ever made Raspberry Wine?
Making wine at home may sound like quite a labour intensive undertaking, but I believe it is not as difficult as is appears to be.
I have never made my own wine, however, I do recall my father making a batch of wine from time to time when I lived at home with my parents. It seemed like it was an easy and "no stress" type of operation, but, then again, when living as a kid in your parents home, nothing seems like it takes too much work when you are not responsible for it:)My father had a very small set up in a corner of the laundry room in the downstairs of our home, and he would make wine from the first step to the last. Having said that, he did, however, buy the ingredients. It was a great hobby, and diversion from his busy career at an Office in "Downtown Toronto". It was nice to see him relax before retiring for the evening, while enjoying a glass of his home made wine with my mother or serving his own wine creations with family and friends at dinnertime!
My parents have since moved to a Condominium, and Dad is unable to continue to make wine in his own home. He still makes a batch from time to time at a local Shop where you do the wine making process, (according to the wine recipe you choose), on the premises, and come back later to bottle your brew! When we invite Dad and Mom for supper to our home, he almost always brings a home-made bottle of our favourite wine, and I believe his home-made wine is second to none! Thanks Dad!:) If you are going to make wine for the first time, it is a good idea to buy a complete wine making kit, such as the ones below. If you grow your own raspberries, or they are available to you for free, obviously that will decrease the cost of your wine making considerably. It is important however, to use only firm, ripe fruit of good quality to ensure the wine will be a qood quality brew. If you use over ripe or unripe (sour) raspberries, the resulting wine will be bitter or sour. That would be a waste of time, effort and expenses! You can buy all the other ingredients you need from a wine makers supply store, or, in some areas, you can buy it from your local grocery store. If you need additional help, the staff at a wine makers supply store would most likely be the best people to ask any questions you may have regarding making your own wine. If you find it more convenient, you can also purchase supplies on line.
Raspberry Wine Recipe
Ingredients
12 cups *fresh raspberries
5 1/2 cups granulated sugar
1 tsp. yeast nutrient
1 tsp. acid blend
2 campden tablets, crushed
1/2 tsp. pectic enzyme
1 pkge. wine yeast
1 gallon water
*Do not use raspberries that are over ripe or spoiled. The quality of the wine reflects the quality of the raspberries that were used. If you use sour, or over ripe fruit, the wine will be sour or bitter. Use firm, ripe fruit for the best quality wine.
Directions
Crush the raspberries and place them in a primary fermentor.
Add the water, sugar, nutrients, acid blend, pectic enzyme and the crushed campden tablet.
Stir well to dissolve the sugar, and allow mixture to sit overnight.
Specific gravity should be between 1.090 and 1.095.
Sprinkle yeast over the mixture and stir.
Stir the mixture daily for 5 or 6 days, until the specific gravity is 1.040.
Strain the mixture, and squeeze out as much juice as possible from the fruit.
Siphon into secondary fermentor and place airlock.
For a Dry Wine, rack in three weeks, and every three months for one year. Bottle.
For a Sweet Wine, rack at three weeks. Add 1/2 cup sugar dissolved in 1 cup wine. Stir gently, and place back into secondary fermentor. Repeat the process every 6 weeks until fermentation does not restart with the addition of sugar. Rack every three months until one year old. Bottle.
**The Raspberry Wine will taste the best if you can refrain from drinking it for one full year from the date it was started.
