Red Raspberry Bars Recipe

Recipe Idea for Christmas Raspberry Squares

This easy to make Red Raspberry Bars Recipe with chocolate and red raspberry jam are a great choice for Christmas Baking, with all the vibrant red colour display among your Christmas Goodies!



Of course, they are equally as scrumptious at ANY time of the year! These raspberry bars are quick and easy to make too, so, why not surprise your family today, and let's get baking!


Recipe for Raspberry Bars/Squares

Ingredients

1 cup butter or margarine, cold
1 cup granulated sugar
1 egg, beaten
3/4 cup pecan, finely chopped
2 1/2 cups all-purpose flour
1 1/2 cups raspberry jam
1 2/3 cup chocolate chips

Red Raspberry Bars Recipe from Scratch

Directions

In a bowl, stir together the sugar, egg, pecans and flour.

Using a pastry blender, or a fork, cut in the butter until the mixture resembles coarse crumbs.

Remove 1 1/2 cups of the crumb mixture and set it aside.

Transfer the remaining crumb mixture to a greased 9" x 13" baking dish and press into the bottom of the dish.

Spread the raspberry jam over the crust layer.

Sprinkle the chocolate chips over the jam layer.

Sprinkle the reserved crumbs over the chocolate chips layer.

Bake at 350° F for 40 - 45 minutes, or until lightly browned.

Allow the bars to cool completely in the baking dish before cutting into bars (or squares).

This recipe makes approximately 18 medium size bars, or a larger number of bars if cut into smaller portion size.
