Sparkling Raspberry Cocktail Recipe

If you are searching for a Sparkling Raspberry Cocktail, here is one with peaches and raspberries! It can be made with, or without alcohol. This is a good choice in the summer when the raspberries and the peaches ripen at close to the same time. Traditional cream soda pop gives this drink a smooth flavour and a nice fizz!



Ingredients

2 cups fresh red raspberries
2 fresh peaches
2 tbsps. Drambuie or brandy (OPTIONAL)
1 tbsp. icing (confectioner's)sugar
cream soda carbonated beverage

Directions

Place a raspberry into six sections of an ice cube tray, and pour water over to cover. Freeze for several hours.

Peel and pit the peaches, and cut one half into slices.

Reserve 2/3 cup of the raspberries, and divide the rest, along with the peach slices, between two tall stemmed glasses.

If using liqueur, drizzle over the fruit in the glasses.

Push the reserved raspberries and the remaining peaches through a juicer.

Add the icing sugar to the fruit juice and pour over the fruit in the glasses.

Turn the raspberry-filled ice cubes out of the tray and add three to each glass.

Top with the cream soda beverage and serve immediately, with long spoons for scooping up any fruit left in the glasses.

Serves 2.

TIP - Frost the rims of glasses by brushing them with lemon juice and then dipping them in sugar. Let the rims dry until ready to serve. You can also use "salt" instead of the sugar.
