Tarts Recipe - Easy Fruit Jam Pastry Recipe from Scratch

This Easy Tarts Recipe is fun to make in mini size. If you want to make larger tarts, simply use larger cutters to make larger pastry shells. You can easily substitute any type of fruit jam for these amazing pasty treats...try them...you will be glad you did!



Ingredients

1 3/4 cups all-purpose flour
2 tbsp. granulated sugar
1/4 tsp. salt
1/2 tsp. cinnamon
3/4 cup butter
2 egg yolks
1 cup raspberry jam (or your choice of flavour)
1 tbsp. whipping cream, not whipped
ice water
Round Cookie Cutter (2" - 3" for mini tarts)

Directions

In a bowl, combine the flour, sugar, salt and cinnamon.

Add the butter, and using a pastry blender, or a fork, mix together until the mixture resembles coarse crumbs.

In a small bowl, mix, (with a fork) 1 egg yolk with 2 tbsp. ice water and add to the flour mixture. Combine together until the dough comes together and can be made into a flattened circle.

On a floured surface, roll out the dough to 1/4".

Using a round cookie cutter cut out shapes and press into mini tart or muffin tin pan. Shape crust.

Fill each pastry shell with 1 1/2 tsp. jam, and decorate tops with cut-outs of dough.

In a small bowl, combine the remaining egg yolk with the cream. Lightly brush the exposed dough with the egg yolk/cream mixture with a pastry brush.

Bake at 350° F for 20 to 25 minutes.

*Note: if you are making larger treats, the bake time will need to be increased accordingly.
