In a small bowl, mix, (with a fork) 1 egg yolk with 2 tbsp. ice water and add to the flour mixture. Combine together until the dough comes together and can be made into a flattened circle. On a floured surface, roll out the dough to 1/4". Using a round cookie cutter cut out shapes and press into mini tart or muffin tin pan. Shape crust. Fill each pastry shell with 1 1/2 tsp. jam, and decorate tops with cut-outs of dough. In a small bowl, combine the remaining egg yolk with the cream. Lightly brush the exposed dough with the egg yolk/cream mixture with a pastry brush. Bake at 350° F for 20 to 25 minutes. *Note: if you are making larger treats, the bake time will need to be increased accordingly.
