Granola Bars Recipe
Muesli Bars make Healthy Snacks

This Granola Bars Recipe (Muesli Bars), makes healthy snacks for kids and adults. For this recipe it is best to use the plainest muesli, and not the crunch type, although it can have some raisins or nuts. You can substitute the dried raspberries with a dried fruit or fruits of your choice.

Ingredients

12 ounces muesli
3/4 cup all-purpose flour
1 tsp. baking powder
2/3 cup brown sugar, packed
3/4 tsp. cinnamon
1/2 cup rolled oats

1/8 cup dried raspberries
1/8 cup nuts, coarsely chopped
4 tbsp. liquid honey
2/3 Greek yogurt
1 large egg (or 2 small eggs)
2 tbsp. sunflower oil
2 tbsp. milk
parchment paper

Directions

In a large bowl, mix the muesli, flour, baking powder, brown sugar and the cinnamon.

Add the oats, chopped nuts, dried raspberries, (or dried fruit of your choice). Add to the muesli mixture.

Mix in the honey, yogurt, egg, oil and milk, and stir until well combined.

Cover a 9" x 13" baking dish with parchment paper and scoop the granola bar mix into it. Smooth the surface with the back of a large spoon or a spatula.

Bake at 350° F for about 30 minutes on the middle rack of the oven.

Remove from the oven, and, while still warm, cut into 12 bars and allow to cool.

Keep fresh in an air tight container.
