Mixed Salad with Raspberries
With Homemade Heart Shaped Croutons!

This Pretty Mixed Salad with Raspberries is a great choice for any occasion which calls for a salad!



The addition of grapes, raspberries, and pecans gives this salad sweetness.. and the home made heart shaped croutons gives it a sprinkling of LOVE!!

Raspberry Salad


Great salad idea for a wedding, a bridal shower, Mother's Day, a romantic dinner, or anytime!! You can dress it with purchased dressing, or make a raspberry dressing yourself...see the link below for the Best Raspberry Dressing Recipes.




Ingredients

4 slices of white bread
butter flavoured cooking spray (I used olive oil spray)
3 tbsps. of parmesan cheese
1/3 cup of pecans (or walnuts)
6 cups of mixed salad greens
sprinkling of basal
1 cup of seedless green and/or red grapes, halved
1/2 cup of raspberries, fresh
Raspberry Dressing (purchased or see below for recipes)

Directions

Preheat oven to 375° F.

Using l 1/2 and/or 2" heart-shaped cookie cutters, cut out hearts from the bread.

Place hearts on one side of a large baking sheet.

Coat the hearts with cooking spray (or olive oil), then sprinkle with the cheese.

Arrange the pecans on the other side of the baking sheet.

Bake the cut-out hearts and the pecans for approx. 5 minutes, or until the crouton hearts are crisp and the pecans are toasted.

Remove from the baking sheet to cool.

In a large serving bowl (or in 6 individual salad bowls) toss the greens with the basal, grapes, and the raspberries.

Add the croutons and the toasted pecans.

Drizzle with Raspberry Dressing just prior to serving.

Serves 6.
