Best Mothers Day Recipe Idea
With Fruit
For Dessert or Brunch

~ Berry Brunch Cake ~

This Mothers Day Recipe is an excellent idea for a recipe for Mom with FRUIT. It will make a great brunch idea, or snack time recipe for with a cup of tea or coffee, or a scrumptious dessert! You can use any combination of berries to make 2 cups of fruit! A Berry Good Idea for Mother's Day!



Ingredients

1 1/2 cups plus 1 1/2 tbsp. all-purpose flour
2 tsp. baking powder
3/4 cup butter, softened
3/4 granulated sugar (or superfine sugar is preferable)
3 beaten eggs
1 tsp. vanilla extract
2 cups fresh, mixed berries (raspberries, black raspberries, blueberries or blackberries)
1 1/4 cups crushed gingersnaps
ice cream or whipped cream for garnishing, optional

Directions

In a bowl, combine the flour and the baking powder.

Add the softened butter, sugar, beaten eggs, and the vanilla extract, and beat, using an electric mixer, until well combined and mixture is smooth.

Spoon one half of the mixture into a greased and lined 9" round, spring form cake pan. Smooth the surface area with a spoon or a spatula.

Spread the berries evenly over the cake mixture.

Stir the remaining 1 1/2 tbsp. of flour into the remaining mixture of batter.

Spread the crushed cookies on a large plate. Using 2 spoons, toss small spoonfuls of the batter mix into the crushed cookies, and then arrange this over the cake in the pan.

Bake at 350° F for 45 - 55 minutes, or until cake is risen, firm and has turned a golden brown colour.

Let cool in the pan for about 2 - 3 minutes, and then remove the sides and finish cooling on a wire rack.

Best eaten day of making!

Serve warm or cold with ice cream or whipped cream.
