Lemon Raspberry Bars Recipe
Quick and Easy Bars Recipe

This Lemon Raspberry Bars Recipe is quick and easy to make, and the taste is scrumptious! The combination of lemon and raspberry makes these bars very refreshing in flavour!

Lemon Raspberry Bars Raspberry Squares


Ingredients

FOR THE BARS

1 1/2 cups all purpose flour
1/2 cup icing sugar
3/4 cup butter, cold
3/4 cup raspberry jam
1 1/2 cups granulated sugar
3 tbsps. all purpose flour
1 tsp. baking powder
4 eggs
1/2 cup lemon juice

FOR THE LEMON GLAZE

3/4 cup icing sugar
1 1/2 tbsps. melted butter
1 1/2 tbsps. lemon juice

Directions

Combine the 1 1/2 cups of flour and the icing sugar, cut in butter (using a pastry cutter or fork), until mixture is well mixed and crumbly.

Press the above mixture into the bottom of a greased 13 x 9 inch (3.5 L) glass baking dish.

Bake at 350°F for 15 to 18 minutes.

Let cool for about 15 minutes.

Heat the raspberry jam on low heat in the microwave until just warm.

Spread the jam on the baked crust.

In a large bowl, combine the granulated sugar, the 3 tbsps. all purpose flour, and the baking powder.

Add eggs and lemon juice and mix well.

Carefully (using a ladle), spoon the lemon mixture over the raspberry layer.

Bake at 350° for 20 to 25 minutes, or until golden brown.

Cool.

For glaze, combine the icing sugar, melted butter and lemon juice, and blend until smooth.

Spread glaze over raspberry bars and let set.

Cut into bars.

Makes 24 to 30 bars.
