Belgian Raspberry Cookie Recipe

Although usually made in round shapes, these amazing cookies can be cut in any shape you like.

For our daughter's Wedding Reception we included Belgian Cookies cut into the shape of a heart.

I have included a picture of this heart shaped cookie on this page with the Belgian Cookie Recipe at the bottom of this page.

Also, as you can see (scroll down), instead of a piece of candied cherry on top, we made icing flowers, and used a candied pearl for the centre.

These cookies were a real hit at the Wedding Reception!

The possibilities and themes are endless - be creative and make your own design!







Ingredients

FOR THE COOKIES

1 cup corn starch
1 cup icing sugar
2 cups cake & pastry flour
1 1/2 cups butter ("room temp.")
raspberry jam

FOR THE ICING

2 1/2 cups icing sugar
1/4 cup (approx.) hot water
1/2 tbsp. butter
3/4 tbsp. lemon juice

Directions

FOR THE COOKIES

Cream the butter and icing sugar together using a fork.

Add flour and corn starch to above mixture and cream together.

Make sure that the ingredients are uniformly mixed in.

Roll out the cookie dough to about 1/4" thickness.

Cut out shapes using a cookie cutter.

Bake cookies on a cookie sheet at 350° F for approx. 10 minutes. Do not over bake. The cookies are done just before the edges start to turn brown.

When cool, put raspberry jam on the bottom side of one cookie, and place another cookie on top of the jam (top sides of cookies on outsides).

Allow cookies to sit till they are "glued" together with the jam.

When cookies are totally cooled, ice the tops with prepared icing and add a piece of candied cherry (or other garnish).

FOR THE ICING

Cream the icing sugar and butter together, and add the lemon juice.

Slowly add the hot water, using just enough to make a thin, spreadable icing.
