Easy Raspberry Rhubarb Dessert
Stewed Rhubarb and Berries for Dessert
This Easy Raspberry Rhubarb Dessert is very quick and easy to make. Tart, Sweet and Delicious! Raspberries and rhubarb are usually available in season at the same time, so use the opportunity to make this dessert fresh, or, out of season, you can use frozen rhubarb and purchase fresh raspberries.
You can make enough of this to use as dessert for a large number of people, or for more than one day's desserts for less people. I use this recipe as a side dish for many meals that I prepare...raspberries are nutritious and rhubarb is likewise nutritious. This is also a very economical dish to make if you grow your own rhubarb!
Ingredients4 cups chopped rhubarb (approx. 1 inch lengths) 1/2 cup water 1 cup granulated sugar 1/2 pkg. (45 gram size), raspberry flavoured gelatin (Jello fresh raspberries for garnishing
DirectionsCombine the rhubarb and the water on the stove over "medium" heat until the rhubarb boils. Turn the heat down to "low" heat and let the rhubarb simmer for about 1/2 hour, (or until the rhubarb is tender), stirring often to avoid sticking and burning. Remove the rhubarb from heat and add the sugar, and stir well. Add the flavoured gelatin and continue to stir well to combine, ensuring that all the gelatin is well mixed in. Allow the mixture to cool for about 20 minutes on the kitchen counter, stirring occasionally, and then refrigerate. To serve, spoon the rhubarb mixture into individual bowls and garnish with fresh raspberries. *Note - This dessert stores well in the refrigerator, I store this dessert in the refrigerator for up to one week.
