Mandarin Raspberry Salad Recipe

When it comes to Leafy Raspberry Salads, this recipe with Fresh Raspberries is hard to beat!



This Raspberry Salad Recipe is a berry good recipe for a fabulous tossed salad of mixed leafy greens, raspberries, mandarin oranges, and almonds. It is also one amazing colorful salad! It has both "eye" appeal and "palate" appeal!

Raspberry Salad Mandarin Salad Recipe


This salad recipe is a great idea for a Christmas Dinner salad, a Thanksgiving Dinner, Easter Dinner, or ANY Special Occasion Celebration!



Ingredients

FOR THE SALAD

4 cups leafy mixed salad greens
1 can (284 ml size) mandarin oranges, drained
1 cup fresh raspberries
1 cup Mozzarella cheese (or another choice of cheese)
1/4 cup sliced almonds, toasted

FOR THE SALAD DRESSING

1/4 cup raspberry vinegar (or Raspberry Balsamic vinegar)
1/8 cup dijon mustard
1/2 cup olive oil
1/8 cup honey
salt and pepper to taste

Directions

Combine all the salad ingredients into one large, or four separate, bowls.

Whisk together the vinegar, honey, mustard and seasonings in a small bowl.

Gradually add the oil in a slow, steady stream to form a thick dressing.

Drizzle the dressing over the salad just before serving.

Serves 4.

*Note -toasting the almonds adds crunch to the salad and intensifies the flavour of the nuts. To toast the almonds in the oven, spread the nuts in a single layer on a shallow baking dish (or cookie sheet). Bake at 350° for about 3 to 4 minutes or until golden brown, stirring occasionally.
