IngredientsFOR THE SALAD 4 cups leafy mixed salad greens 1 can (284 ml size) mandarin oranges, drained 1 cup fresh raspberries 1 cup Mozzarella cheese (or another choice of cheese) 1/4 cup sliced almonds, toasted FOR THE SALAD DRESSING 1/4 cup raspberry vinegar (or Raspberry Balsamic vinegar) 1/8 cup dijon mustard 1/2 cup olive oil 1/8 cup honey salt and pepper to taste Directions Combine all the salad ingredients into one large, or four separate, bowls. Whisk together the vinegar, honey, mustard and seasonings in a small bowl. Gradually add the oil in a slow, steady stream to form a thick dressing. Drizzle the dressing over the salad just before serving. Serves 4. *Note -toasting the almonds adds crunch to the salad and intensifies the flavour of the nuts. To toast the almonds in the oven, spread the nuts in a single layer on a shallow baking dish (or cookie sheet). Bake at 350° for about 3 to 4 minutes or until golden brown, stirring occasionally.
