Use Romaine or bibb lettuce to make this Raspberry Chicken Recipe with an amazing salad dressing.
Not only does this salad taste amazing, but it's so nutritious too!
If you prefer to use a purchased Raspberry Dressing, or you would like to use a different dressing recipe, you can just "mix and match"!

1/4 cup raspberry jam
2 tbsps. olive oil
1 tbsp. white wine vinegar
1 tsp. Dijon mustard
salt to taste
pepper to taste
2 tbsps. minced green onion
1 cup fresh raspberries
4 cooked chicken breast halves, cut into 1 inch pieces
4 cups bibb (or romaine) lettuce
In a medium sized bowl, whisk together the raspberry jam, oil, and vinegar, Dijon mustard and salt and pepper.
Add the minced green onion and the raspberries to the vinaigrette.
Add the diced chicken and toss to combine with the vinaigrette.
Arrange the lettuce on individual salad plates/bowls.
Spoon chicken mixture over lettuce just before serving.
