Raspberry Raisin Squares Recipe

This Raspberry Raisin Squares Recipe makes raspberry bars with amazing taste sensation! I prefer them with made with raspberry jam, but you can make them with any variety of jams or preserves. For a new taste sensation, you can make them with chocolate hazelnut spread in place of the jam! I made some of these today, and my husband was quite pleased, as oats and raisins are his favourites.I used ground up pecan for the nuts, grinding them up in my coffee bean grinder....this handy grinder works great for nuts...and way less mess than using anything bigger. These raspberry bars also make a great choice for Christmas Baking Squares with their vibrant red colour.
Ingredients 1 1/4 cups quick oats 3/4 cup all-purpose or whole wheat flour 2/3 cup brown sugar, packed 3/4 tsp. baking soda 1/2 cup butter 2/3 cup walnuts, finely chopped or ground or other nuts of your choice 1 1/4 cups raisins 2/3 cup raspberry jam
Directions In a bowl, combine the oats, flour, brown sugar and the baking soda. Cut in the butter with a pastry blender (or fork), until mixture is crumbly. Stir in the nuts. Reserve 1 1/4 cups of the mixture for the topping, press the remainder in a greased 8 inch square baking dish.
Mix, (with a spoon), the raisins and jam. Spread the jam mixture over the base, and sprinkle the reserved oat mixture on top. Pat down lightly. Bake at 375° F for 25 - 30 minutes, or until golden brown. Cool completely in pan or rack. Cut into bars. Makes 12 - 16 bars. Enjoy these Raspberry Squares!
