This Raspberry Raisin Squares Recipe makes the most yummy baked bars made with raspberry jam!
The "red" colour of these baked goodies makes this recipe very suitable for Christmas baking too!
I made some of these today, and my husband was quite pleased! ... especially since baked goods made with raisins and oatmeal are his favourite!
I prefer these amazing squares made with raspberry jam, but you can make them with any variety of jams or preserves.
For a new taste sensation, you can even make them with chocolate hazelnut spread in place of, or mixed in with the jam! YUMMY!
I used ground up pecan for the nuts, grinding them up in my coffee bean grinder ... this handy grinder works great for nuts ... and way less mess than using a larger size appliance.
Ingredients
1 1/4 cups quick oats
3/4 cup all-purpose or whole wheat flour
2/3 cup brown sugar, packed
3/4 tsp. baking soda
1/2 cup butter
2/3 cup walnuts, finely chopped or ground or other nuts of your choice
1 1/4 cups raisins
2/3 cup raspberry jam homemade or purchased
Directions
In a bowl, combine the oats, flour, brown sugar and the baking soda.
Cut in the butter with a pastry blender (or fork), until mixture is crumbly.
Stir in the nuts.
Reserve 1 1/4 cups of the mixture for the topping, press the remainder in a greased 8 inch square baking dish.
Mix, (with a spoon), the raisins and jam.
Spread the jam mixture over the base, and sprinkle the reserved oat mixture on top. Pat down lightly.
Bake at 375° F for 25 - 30 minutes, or until golden brown.
Cool completely in pan or rack.
Cut into bars.
Makes 12 - 16 bars.
