Valentines Dessert Recipe Idea picture

This Valentines Dessert Recipe idea makes a quick and easy Raspberry Cheesecake Recipe, made in a 9" x 13" baking dish. It makes a very scrumptious dessert for a Special Valentine! Or, make this to surprise your family on Valentine's Day! It is made using a store-purchased lemon cake mix as part of the ingredients - quick and easy. This cheesecake is "lighter" than most cheesecake recipes. The lemon and raspberry flavours combine to make a truly delectable cheesecake. It's Valentine's Day, make a dessert with RED - the Color of Love !



Ingredients

1 box (500 gram size) lemon cake mix
500 grams cream cheese, softened
1 cup sour cream
1/2 cup granulated sugar
3 eggs
1/3 cup vegetable oil
raspberry sauce (choose one)
fresh raspberries for garnish

Directions

Reserve 1 cup of lemon cake mix.

In a bowl, using an electric mixer, mix the remaining cake mix, 1 egg, and the oil.

Transfer the mixture into a greased 9" x 13" baking pan, (I used a glass baking dish), and press lightly, using your fingers, into the bottom of the baking dish.

Bake at 325° F for about 7 - 10 minutes.

Meanwhile, using an electric mixer, mix the reserved cup of cake mix, the 2 eggs and the sugar until well blended.

Add the cream cheese and the sour cream and mix until well blended.

Spread the creamed mixture on top of the bottom crust and bake at 325° F for about 25 - 30 minutes.

Top with raspberry sauce and fresh raspberries.
