This Mixed Berry Compote with Liqueur and Red Currants (or a substituted berry), raspberries and strawberries makes a scrumptious chilled dessert with healthy berries!
This Red Fruit Compote is pleasing to the eyes, and even more pleasing to the palate! A great idea for a fruit-filled dessert!
1/2 cup granulated sugar
1 1/4 cups water
6 oz. fresh red currants, stalks removed (or another choice of berry)
8 oz. fresh raspberries
8 oz. fresh strawberries, hulled
2 tbsp. Cointreau or orange liqueur
In a pan, add the water and the sugar, mix together, and bring the mixture to a boil, until the sugar is dissolved (this may take about 5 minutes). (Stir often to prevent sticking and burning).
Remove the water/sugar mixture from the heat, and allow mixture to cool.
Place the red currants, raspberries and the strawberries in a serving dish and pour the liqueur over the fruit.
Allow the fruit mixture to stand for about 1 1/2 hours, gently stirring from time to time.
Pour the cold syrup (water/sugar mixture), over the berries and serve chilled with cream.
