This Easy Chicken Salad Recipe with mixed baby greens and fresh red raspberries and peach pieces makes a great "starter" salad, a lunch or a light dinner dish.
The attractive combination of chicken and fresh berries, makes it particularly delightful .. both to the eye and to the palate!
2 smoked chicken fillets
2 peaches or nectarines
3 tbsp. almonds (roasted, optional)
1/2 cup fresh raspberries
4 tbsp. (mild) olive oil
1 1/2 tsp. raspberry vinegar
pinch of salt
pinch of pepper
4 cups mixed baby lettuce greens
Cut the chicken fillets into thin slices (diagonally).
Peel peaches or nectarines, pit and quarter them and cut into smaller pieces.
Coarsely chop the almonds.In a bowl, whisk the olive oil and the vinegar together and season the mixture with salt and pepper to taste.
Toss the baby lettuce greens with the vinaigrette mixture.
Arrange the salad among four salad plates.
Arrange the peach or nectarine pieces and the fresh raspberries on top of each plate of salad, and sprinkle with the chopped almonds.
