This Mother's Day Muffin Recipe is made of Fresh Raspberries and Cream ... special ... just like Mom!
They are easy to make, and very moist raspberry muffins!
If you are planning on serving Mom "breakfast in bed", this is a great recipe idea!
Of course you don't have to wait until Mother's Day to make these Mother's Day Muffins ... they will taste scrumptious at any time of the year!
2 cups all-purpose flour
1 tbsp. baking powder
1/8 tsp. salt
1/2 cup granulated sugar
1 cup whipping cream, (not whipped)
1/4 cup milk
6 tbsp. melted butter
1 tsp. vanilla extract
1 cup fresh raspberries
whipped cream for garnish, optional
fresh raspberries for garnish, optional
In a large bowl combine together the flour, baking powder, salt, and the sugar.
Gently stir in the raspberries.
In another bowl, lightly beat the eggs, then add in the cream, oil, and vanilla.
Make a well in the center of the dry mixture and pour the egg mixture in, stirring gently, just to combine. Do not over mix.
Spoon the batter into the prepared pan (greased cups, or muffin papers), and bake at 400° F for about 18 - 20 minutes, or until golden brown.
To serve add whipped cream and fresh raspberries, if desired.
Makes 8 - 12 muffins.
