If you are looking for a recipe to make squares or bars with raspberry jam, you have found a great choice here!

Let's get baking!

1 2/3 cups cake and pastry flour
or 1 1/2 cups all-purpose flour
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup butter or margarine
1 egg
1 tsp. almond extract
2 tbsps. Cake and Pastry Flour
3/4 cup raspberry jam
1 egg yolk
1 tsp. water

Combine the 1 2/3 flour, both sugars, baking powder, salt and cinnamon. Mix well.

Cut in butter until mixture resembles coarse meal.

Add egg and extract. Mix with a fork.

Remove 1/2 cup of mixture and add the 2 tbsps. flour to it.

Press the remaining mixture into a lightly greased 9" square cake pan.

Spread the jam evenly over top.

Add enough water to reserved mixture until it holds together. (This will resemble pastry dough). Roll into 12 pencil strips and weave strips diagonally over the jam to form a lattice.

Brush lattice with mixture of egg yolk and water.

Bake at 375°F for 25 - 30 minutes or until golden brown.

Cool, then cut into bars.

Makes 24 bars.

Most people know that raspberries are nutritious, but did you know that the seed of raspberry fruit is nutritious as well?

Raspberries are a good source of natural ellagic acid, including the seeds! In fact, raspberries are a leading source of ellagic acid.

It is believed that ellagic acids may slow down the growth of some cancer cells.

Research has also shown that ellagic acid from raspberries is easily absorbed by the body.

The seeds of raspberries also serve as beneficial "roughage" in the digestive tract.

Including the raspberry seeds when making raspberry jam or jelly is a "berry" healthy idea!
