Easy Almond Raspberry Bars Recipe

Baking Squares Made with Raspberry Jam

Ingredients

1 2/3 cups cake and pastry flour
or 1 1/2 cups all-purpose flour
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup butter or margarine
1 egg
1 tsp. almond extract
2 tbsps. Cake and Pastry Flour
3/4 cup raspberry jam
1 egg yolk
1 tsp. water







Directions

Combine the 1 2/3 flour, both sugars, baking powder, salt and cinnamon. Mix well.

Cut in butter until mixture resembles coarse meal.

Add egg and extract. Mix with a fork.

Remove 1/2 cup of mixture and add the 2 tbsps. flour to it.

Press the remaining mixture into a lightly greased 9" square cake pan.

Spread the jam evenly over top.

Add enough water to reserved mixture until it holds together. (This will resemble pastry dough). Roll into 12 pencil strips and weave strips diagonally over the jam to form a lattice.

Brush lattice with mixture of egg yolk and water.

Bake at 375°F for 25 - 30 minutes or until golden brown.

Cool, then cut into bars.

Makes 24 bars.
