This Easy Raspberry Bars Recipe was passed to me by my daughter-in-law Charlene.
I made it with black raspberry jam, but red raspberry jam would work equally well.
If you've got fresh raspberry jam on hand, or you are wondering what to make with jam that is not being used, why not bake these yummy squares with jam?
This amazing recipe has only 7 ingredients and makes the most delicious, moist bars, also very suitable to make for Holiday Christmas Baking ... with the red layer peeking out between the scrumptious upper and bottom layers, they will look perfect complimenting any cookie or bars platter!
They can be also be served as a dessert!
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. almond extract
1 cup butter, room temperature
1 cup red or black raspberry jam
Line an 8" square baking pan with parchment paper.
In a large bowl, combine the flour, sugar, baking powder, and the salt.
Cut in the butter, using a fork, a pastry blender (or your fingers!), until the mixture is a rough, crumbly texture.
Firmly press 3 cups of the crumble into the bottom of the prepared (paper lined) pan.
Stir the raspberry jam to soften it, and make it more spreadable. Spread the jam evenly over the pressed crumble in the pan.
Sprinkle the remaining crumble on top of the jam, and press down gently.
Bake at 350° F for about 35 minutes, or until the edges just begin to turn golden brown.
Allow bars to cool before slicing. If preferred chill in refrigerator before slicing.
These squares will freeze well for a few weeks.
Makes about 16 - 18 yummy raspberry squares or bars.
