Searching for a quick, but special looking (and tasting!) Birthday Cake for someone who loves raspberries?
You've just found it!
This cake recipe is really just a purchased cake mix with a little "extra" touches to make it a little more special ... and scrumptious!
It may LOOK like you have put a lot of time and effort into creating this delicious cake, but the truth be told ... it really is almost effortless!
1 boxed cake mix, white, (510 gram size)
1 pkge. vanilla instant pudding, (102 gram size)
1 container of pre-made icing, vanilla, (340 gram size)
raspberry jam, homemade or store purchased
fresh raspberries, blueberries or strawberries (optional)
chocolate for garnishing
Prepare the cake mix batter as per the instructions on the box.
Put the cake batter into a 9" x 13" glass baking dish.
Bake as directed according to the cake mix instructions.
When cake has been baked, and cooled, remove cakes from the glass baking dish onto a cake plate.
Carefully slice the cake horizontally into two layers.
Prepare the instant pudding as per the instructions on the box.
Spread Raspberry Jam on the top of the bottom layer of cake.
Spread the prepared pudding on top of the jam layer.
Place the top layer on top of the pudding layer, (see images below).
Ice the entire cake with the purchased vanilla icing.
Add fresh raspberries (and other berries, optional), and chocolate shavings.
Note - use a potato peeler to "shave" the chocolate for the icing.
Ready to serve!
