This Fruit Salad Recipe is easy to make and amazing in presentation!
It has only 1 gram of fat, and packed with Vitamin C!
A truly UNIQUE mixed fruit salad idea!
Cut out melon shapes and fill the centers with an assortment of mixed fruit such as raspberries, blueberries, kiwi and more!
Add Some food flair by making the honey dew fruit rings in different shape rings, according to the occasion or the time of year ... cookie cutters come in SO many shapes and sizes!
Christmas tree shape, flower shape (Easter), heart shape (Wedding or Valentine's Day), butterfly, round, animal shapes ... the possibilities are endless!
You can be sure that even the kids will eat their salad!
Note - You can change the fruit, by leaving certain selections out, or substituting different fruit, however you wish! (see my pictures ... some of them show I left out the peaches and blueberries, etc.)
1 honey dew melon
2 tbsp. lime juice
2 tbsp. honey
1 cup fresh raspberries
1 cup red or green grapes
1/4 cup blueberries
1 peach, diced (I used canned peaches)
2 kiwi fruit, peeled, cut into bite size pieces
red leaf lettuce leaves
Cut the honey dew melon crosswise into 3/4" slices, and remove the rind and the seeds.
Cut a decorative edge (your choice of shape), on 4 (or more) center rings.
Place melon shape on lettuce-lined salad plates.
Cut remaining melon into bite sized pieces.
In a bowl, combine the lime juice and the honey and blend well, with a fork.
Add the grapes, kiwi fruit, blueberries, peaches and the melon pieces and toss gently to coat.
Add the raspberries, and toss very gently, just to coat.
Spoon fruit into center of melon rings. Serves 4 - 6.
