This easy Raspberry Ice Cream Recipe can be made with red or black raspberries, or, use a combination of red AND black raspberries!
You do not need an Ice Cream Maker Machine to make this recipe (or any of the ice cream recipes on this website).
Treat someone, or treat yourself:), with some delicious, homemade Raspberry Ice Cream!
If you only have frozen raspberries, you can use them, but do not thaw them prior to using them in this recipe.
2 cups (1 pint) fresh raspberries, red or black raspberries (about 3/4 lb)
1 1/2 cups sugar, fine, divided
1/2 of a lemon, juiced
2 eggs, large, room temperature
1 cup milk
2 cups whipping or heavy cream
In a bowl, combine 3/4 cup sugar, the lemon juice and the raspberries, and toss to coat.
Cover, and refrigerate for 2 hours, stirring every half hour.
In another bowl, whisk the eggs until light and fluffy, about 1 to 2 minutes.
Whisk in the remaining 3/4 cup of sugar, a little at a time, continuing to whisk, (for about 2 minutes), until mixture is completely combined and blended together.
Continue to whisk the mixture while adding the cream, and the milk, until well blended.
Using a sieve, drain the juice from the raspberry mixture and add it to the cream mixture and continue to blend.
Mash the raspberries until puréed, and stir them into the cream mixture.
Transfer the mixture to an Ice Cream Maker, and freeze, following the manufacturer's directions. Or, if you do not have an Ice Cream Maker Machine,
Makes about 1 quart of Delicious Raspberry Ice Cream!
