This Iced Raspberry Coffee Recipe is a unique drink with a combination of coffee, cream and fresh raspberries!
It is best served over ice and garnished with fresh raspberries and whipped cream!
This recipe makes enough raspberry iced coffee to serve 2 people (1 cup size serving each). If you plan on making this treat for just yourself, reduce all the ingredients in half...or...make yourself two cups!
1 cup whipping cream (heavy cream), divided
1 cup prepared coffee (regular brew)
2 dozen fresh red raspberries, plus a few for garnishing
1/2 tsp. almond extract
confectioners' (icing) sugar, to taste
In a medium bowl, whip 1/2 cup of the whipping cream with the confectioners' sugar, and set aside.
Mix the coffee, remaining cream, 24 raspberries, almond and sugar in a blender for 20 to 25 seconds, or until smooth.
Pour into glasses, over ice cubes.
Top with the whipped cream and garnish with fresh raspberries.
