This Raspberry Pancake Recipe, makes, what we call "Dutch Pancakes".

This Recipe is our family's ABSOLUTE ♥ FAVOURITE Pancake Recipe!
These pancakes are similar to crepes ... they are made large, (about 10 inches across), and then topped with either maple syrup, sugar, jam, or fresh fruit.
The pancake is then rolled with your fork, and sliced into bite-size pieces (see illustration).
You really must try these ... your family will thank you if you do!
There are a few choice recipes I often make that relate to my Dutch Heritage, and this is one of them!
You can add almost any type of fresh OR frozen fruit to these delicious pancakes - most often I add raspberries, blueberries, finely sliced/chopped strawberries, or finely chopped apples.
5 medium or large eggs
2 1/2 cups flour
3 3/4 cups milk
1/3 cup margarine, melted
1/2 tsp. salt
1/2 tsp. vanilla
1 1/2 cups raspberries (fresh or frozen)
Break eggs into a bowl and beat well.
Add flour and milk alternately to the eggs while mixing until smooth.
Add melted margarine, salt and vanilla, and continue mixing.
Fold in the raspberries.
Spoon about 1/2 to 2/3 cup of the batter into a frying pan and fry both sides on medium heat until light brown.
Serve warm with your choice of sugar, syrup, fruit, or jam.
Roll and slice to eat.
Makes about 12 pancakes.
Note - if this recipe is too large for your needs, then simply adjust the ingredients as needed, or you can make a large batch and re-heat these pancakes in the microwave ... and enjoy them another day for a quick and easy breakfast treat!)
At our home, the early riser the next morning claims the left-over pancakes, and with a quick minute or two in the microwave ... presto ... the pancakes taste like they were just made! :)
