If you keep frozen raspberries, or other fruit in your freezer...you are always ready to go!
If you have never made a frozen fruit dessert, here is a choice recipe to start!
3 peaches, ripe but firm
---peeled, pitted and sliced (about 2 cups)
1/2 cup raspberries
FOR THE SYRUP
1/2 cup granulated sugar
1/2 cup water
1 strip lemon rind
Freeze peach slices and raspberries in a single layer for at least 2 hours or until solid.
Store the peaches and raspberries in freezer bags or air-tight containers.
FOR THE SYRUP
In a small saucepan, bring the sugar, water and lemon rind to a boil, stirring to dissolve the sugar.
Boil for 1 minute, then let cool completely and remove the rind.
In a food processor (or blender)process frozen fruit, pouring in syrup slowly, until smooth, 2 to 3 minutes.
Serve immediately, or store in the freezer.
Makes 4 servings.
