This is a very simple salad to make. The bright red colour of the fresh red raspberries makes quite an impressive show!
This is a recipe which serves about 12 people, but you can easily substitute half (or less) of all the ingredients to make less portions.
FOR THE SALAD
1 tbsp. butter
1/2 cup sliced almonds
1 tbsp. sugar
10 ounces fresh baby spinach
3 cups fresh raspberries
FOR THE DRESSING
1/2 cup sugar
1/2 cup vegetable oil
1/4 cup cider vinegar
1/4 tsp. paprika
1/4 tsp. Worcestershire sauce
In a small skillet, melt butter over medium heat.
Add the almonds; sprinkle with sugar.
Cook and stir for 3 min. or until almonds are lightly brown.
Spread on foil to cool; break apart.
In a large salad bowl, combine the spinach and the raspberries.
In a jar with a tight-fitting lid, combine the dressing ingredients.
Shake the above mixture well.
Drizzle over the salad.
Sprinkle with sugared almonds.
Toss to coat.
Makes 12 servings.
