This Healthy SPINACH SALAD Recipe with berries makes a yummy green salad full of antioxidants!
I've been purchasing fresh baby spinach at Costco and whatever fresh berries were available, and making this salad!
Here I've combined FOUR different types of berries to give it amazing taste ... and color!
You can just add the fresh berries you have on hand - any type will do ... doesn't have to be exactly as this recipe.
If you are looking for a scumptious salad to serve your family or friends, here is the best choice!
This salad is packed full of antioxidants too!
The slightly tart dressing contrasts deliciously with the sweet berries.
I made this salad today, but instead of making my own dressing, I purchased a delicious, ready-made raspberry dressing - quick and easy and ... so TASTY!
FOR THE DRESSING
1 tbsp. vegetable oil
1 tbsp. orange juice
1 tbsp. red wine vinegar
1 tbsp. balsamic vinegar
1 tbsp. water
2 tsps. lemon juice
1/2 tsp. sugar
1/2 tsp. poppy seeds
1/8 tsp. allspice
dash ground cinnamon
FOR THE SALAD
4 cups fresh baby spinach
1/2 cup fresh raspberries
1/2 cup fresh blueberries
1/2 cup fresh blackberries
1/2 cup fresh strawberries, sliced
2 tsps. chopped walnuts, toasted (or pecans)
For dressing, combine the first 10 ingredients into a jar with a tight fitting lid.
Shake the above mixture well.
Combine the spinach and the berries in a salad bowl.
Drizzle with the dressing and sprinkle with the toasted nuts.
Toss to coat.
Make 2 - 4 servings.
