This recipe takes very little effort, for an amazing salad dressing.
I like to make a "double batch", as it does store well for several months in the refrigerator.
Some people like to make raspberry vinegar as gifts for others, presented in a nice bottle.
1 1/2 cups white vinegar
1/2 cup granulated sugar
1 cup fresh raspberries
Combine the sugar and vinegar in a stainless steel or enameled saucepan.
Heat the above mixture, stirring occasionally, until hot but not quite boiling.
Pour mixture into a glass bowl.
Stir the raspberries into the vinegar mixture.
Cover the bowl with plastic wrap and let it stand in a cool place for 6 to 7 days.
Strain the above mixture through cheesecloth twice to remove seeds.
This raspberry vinegar can be stored for several months in the refrigerator in a bottle or jar with a tight fitting lid.
Makes 1 1/2 to 2 cups.
