Yesterday she brought us some of this delicious snack, and I asked her to share the recipe with visitors to this site.
She included this note with the recipe; "... the recipe is very easy to make, and the measurements do not need to be exactly as follows ... just add whatever you like the best! ..."(Thanks Charlene!)
1 1/2 cups almonds (plain, not toasted or salted)
1 cup coconut flakes (sweetened or unsweetened, shredded or not shredded
1/2 cup sunflower seeds
1/2 cup honey
1 tsp. vanilla extract
2 tbsp. olive oil
1/2 cup raisins
1/2 cup craisins (dried cranberries)
1/2 cup dried raspberries, or other dried berries, optional
In a large bowl, mix all the above ingredients, except for the raisins, craisins, and dried berries. (The mixture will be somewhat sticky).
Place the mixture in a flat aluminum pan or glass dish, (use parchment paper in bottom of dish for easy cleaning!).
Bake at 300° f for 30 minutes, stirring every 10 minutes.
Allow mixture to cool, at add the raisins, craisins and the dried berries.
Store trail mix in an air-tight container.
