Low Fat Raspberry Snack Recipe Frozen Fruit Snack or Dessert
This easy to make, fresh fruit, Raspberry Snack Recipe can also be used for a low fat, quick Raspberry Dessert Recipe. This very colourful, light, and refreshing fresh fruit dish will be sure to delight family and friends alike!
*TIP - For individual servings, line 12 muffin cups with paper baking cups. Fill each cup with the fruit mixture and freeze. Remove each serving from freezer when desired!
*Note - If you do not have raspberries on hand, but you do have strawberries, you can easily substitute strawberries for the raspberries.
Ingredients4 cups (1 quart) buttermilk 1 cup granulated sugar 1 tsp. almond extract 1/8 tsp. salt 1 cup peeled, diced fresh peaches 1 cup fresh raspberries 1 cup fresh blueberries
Directions In a large bowl, combine the buttermilk, sugar, almond extract and salt, and mix well. Gently stir in the peaches, blueberries, and then the raspberries, just to combine, and being careful not to break the raspberries too much. Pour the above mixture into an ungreased 9" x 9" square baking dish (freezer safe). Freeze until firm. To serve, remove from freezer, and allow to stand at room temperature 10 - 15 minutes before cutting. Serves 9 - 12. Total fat per 1/12 of recipe: 1 gram.
